After running out of both butter and flour halfway through getting this pie ready, we had to make a quick dash to Tesco to restock. This resulted in a longer detour through the two liquor stores nearby, where we stocked up on Ian’s favourite wine and my favourite beer.
The raspberry pie turned out beautiful and yummy, even though the raspberries were of the frozen kind. What you can’t see in the picture is the layer of ground almonds mixed with butter, laid between the crust and the filling. What you CAN see is the result of a little too much wine:Â the crooked cuts for the latticework. Oh well =)
